• 500g watermelon
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh mint leaves
  • 2 tbsp fresh basil leaves
  • 1 red onion
  • 200g feta cheese
  • 1 tsp dried oregano
  • Juice of 1 lemon

Firstly finely slice the onion into rings and leave in a bowl with the lemon juice.

Now cut up the watermelon and tomoatoes into similar size chunks. Combine the two in a large salad bowl.

Dice the fresh herbs and spinkle them through the salad. Add the onions in the lemon juice.

Crumble the feta on top and season with the dried oregano, olive oil and salt and pepper to taste.
