  • 2-3 tablespoons of Olive oil

An Italian favourite of mine.
Quick and easy. I have made this with baby yellow and red tomatoes as well as the small balls of mozzarella. Either way it’s delicious. Can’t beat this, just a plate of different salami’s and chorizo, glass of wine and you have a lovely light lunch or dinner.

I often cut out the tough cores from the tomatoes with a small knife. Now slice the tomatoes and the mozzarella and arrange on a plate – I like to place a slice of tomato with a slice of the mozzarella and continue this pattern in short rows or in a circle. Sprinkle the basil leaves over the top or be creative and place a leaf with each piece of tomato and mozzarella. A pinch of salt and pepper and a drizzle of olive oil all over the plate of tomato and cheese and you are ready to eat.
