• 1 small onion
  • Garlic 1 clove
  • 1 tin of chopped tomatoes
  • 1 rasher of bacon finely chopped
  • 12 fresh small tomatoes
  • 125g pack of mozzarella
  • Spaghetti
  • Salt and pepper
  • Pinch of dry mixed herbs

Healthy quick midweek supper – can always leave out the bacon for any vegetarians.

Fry the bacon first and then the onion with the garlic, then add the chopped tin of tomatoes. Season with the salt ‘n’ pepper and the mixed herbs. Cook gently for approx. 10 mins. Then for the last 5 mins pop the whole tomatoes in and cover the saucepan.
Cook the spaghetti according to the packet instructions, chop the mozzarella and serve.
