• 250g lentils

  • 2 sticks of celery
  • 1 red onion
  • 3 garlic cloves
  • Sausages

I love lentils but very rarely do I cook them. So decided to try and introduce them into a once a monthly staple just like pasta or rice. When buying lentils read the instructions as some may need to be soaked overnight whilst other don’t.

Follow the lentil packet instructions and cook accordingly but minus 5 mins off the total cooking time. Now get your sausages on the go. Preheat the oven, and in a pan with a little oil cook for approx 30 mins in the middle shelf in the oven Gas Mark 7. Check mid-way through and turn. Now as the lentils cook and the sausages do their thing finely slice (as small as you can) the carrot and celery, garlic and then the onion. Fry the onion in the oil over a medium heat for 5 mins then add the celery and onion and galic. Turn off the heat and leave to one side. Once the lentils are almost cooked (remember to take 5 mins off their total cooking time) pour into the frying pan and stir with the onion, carrot and celery. Turn the heat onto low and add a little boiled water if it looks a little dry. Once the sausages have been cooked tip these in as well as the oil they were cooked in as this will add more flavour. Don’t forget to season with salt and pepper. Cook on low for a further 5 mins and then serve.
