• 500g sausages
  • 2 tbsp sunflower oil
  • 2 onions
  • 2 garlic cloves
  • 3 slices of thick cut smoked bacon
  • 400g haricot beans
  • 400g black eyed beans
  • 250 ml hot beef stock
  • Salt and pepper

A slow cooker winter warmer, serve with a veg and mash. Next time I will add a few more sausages to the pot as a pack of 6 wasn’t quite enough for 2 adults and 2 kids.
Heat the oil in a pan. Add the chopped onions and stir, cooking for approx. 5 mins. Then add the garlic. Use a slotted spoon to take this out of the pan to set to one side whilst you cook the sausages and the bacon on a medium to high heat for approx. 5 mins. When the sausages are beginning to colour all over turn the heat down and tip the onion and garlic back into the pan and cook for a few more minutes on low.
Open the tins of beans, drain and add to the pan. Put the kettle on and using a stock cube make up to 250ml of hot beef stock. Add this to the pan too. Give it all a good stir. Season with salt and pepper
Pour this all into the slow cooker – turn onto low, cover with lid and cook for 6 hours on low setting.
