- Marrow thinly sliced
- Pack of salami slices
- Cherry tomatoes
- Olive oil -2 tablespoons approx.
- Salt and pepper
- Grated parmesan 5/6 tablespoons
I was given half a marrow and didn’t know what to do with it and having had very little luck in the past cooking marrows I began to think!
I saw a picture of baked aubergine and salami with parmesan on top and wondered if I could create something similar…
So this is what I did…
Preheat oven to gas mark 7
Slice the marrow, keeping it’s circular shape and gently pop out the seeds. I ended up with approx. 15 slices. Now create layers of salami and marrow and place in a large rectangular oven dish. Cut the toms in half and place them in middle and down the sides. Drizzle with olive oil and season with plenty of salt and pepper. Place in a preheated oven gas mark 7 for 10 mins on the middle shelf. After 10 mins remove and sprinkle with some grated parmesan. Return to the oven for another 10 or 15 mins reducing the heat to gas mark 5. Make sure the marrow is cooked and the salami is still soft.
Goes well with other sliced meats and salads as this isn’t a meal on its own.
