• 700g potatoes

  • 1 cos lettuce
  • 125 ml French dressing
  • 225 g of small plumb tomatoes
  • 2 tins of canned tuna
  • 12 black or green olives

This classic can include capers, olives, rocket and anchovies which is why this salad is so wonderful as you can add more to less depending on your taste and the ingredients available to you.
The main ones which make this a ‘Nicoise’ are tuna fish, hard boiled eggs, green beans and potatoes.
This is great as you can cook the potatoes, eggs and French beans in advance which will save you a fair bit of time.

Bring the potatoes to the boil in salted water and cook for 20 minutes.
Boil the green beans for 6 minutes .Drain and cool the potatoes and beans under running water.
Slice the potatoes thickly. Shell and quarter the eggs.
Wash the lettuce and spin dry, then chop the leaves roughly.
Moisten the leaves with half of the dressing in a large salad bowl. Now moisten the potatoes, green beans and tomatoes with the dressing, then scatter over the salad leaves.
Now break the tuna fish up with a fork and distribute over the salad and add the olives. Season to taste.
