- Pack of ready cooked large prawn (with tails on if prefer)
- Pack of ready cooked small prawns
- Lettuce (gem lettuce or iceberg – you choose)
- Half a red pepper
- Half a orange pepper
- 5 heaped tablespoons mayonnaise
- 1 teaspoon of worcestshire sauce
- splash of lemon juice
- 5 tablespoons ketchup
- Salt and pepper
- Paprika for dusting
- 6 cm piece of Cucumber
Prep Time 25 mins (there is no cooking!).
This classic retro starter never fails!
You can adapt the sauce to your taste and it’s so moreish. Try serving it in cocktail glasses for a first class dinner party starter or small see through ramekin dishes. I have in past also used avocado to really give it that retro look and it’s so delicious with the sauce. Of course you can use bought Thousand Island dressing but give this sauce a go it really is good! This serves 4 generously – I’ve always eaten prawn cocktail wanting more, so this recipe is a good portion size.
Wash and shred your chosen lettuce finely.
Wash and chop your pepper into small little squares. Chop the cucumber into small squares too.
If using avocado leave this to prep at the end .
Make your sauce, tasting as you go – mixing all the ingredients together. I make this in a jug and then tip the prawns into it to ensure I coat them , stirring carefully.
Place a layer of lettuce on the bottom of the glass /chosen dish you plan to serve this in.
Sprinkle a little red or orange pepper and cucumber.
Add the small prawns on top and dollop a generous spoonful of the sauce.
Place the larger prawns (2/3 depending on how many in your pack) on top, having coated them with the dressing in the jug
Sprinkle again with red or orange pepper and cucumber.
Dust with paprika and serve.
If using avocado, I cut into strips and slide down side of glass so it’s poking out.
If any sauce is left over I place in a small bowl on table so you can help yourself.
