• 1 tin of chopped toms
  • 1 medium onion
  • 1 garlic clove
  • 1 pomegranate
  • Juice of 1 lime
  • Bunch of coriander
  • 3 small red chillis
  • 2 tbsp vinegar
  • 2 tbsp olive oil
  • 1 tsp ground coriander
  • Salt and pepper
  • 1 tsp ground cumin

A great salsa that can be used for any Mexican dish. To de- seed a pomegranate cut it in half then hit it with the back of a metal spoon.

This is very easy, chop the onion and garlic finely, with the chilli’s, remove the seeds if you wish and chop finely. Combine everything together in a bowl, stir well.
