- 1 large onion
- 3-4 garlic cloves
- 2 tablespoons of sunflower oil
- 500g braising beef
- Large aubergine cut into chunks
- 2 tablespoons of red thai curry paste
- 1 tablespoon of fish sauce
- 400ml can of coconut milk
Tried a new slow cooker recipe – Had to use up an aubergine so made a tasty mid-week curry – great after a hard days work! Next time I will do some veg to acompany – pak choi maybe?
Wizz the garlic and onion in a food processor so they are like a paste. Heat the oil in a frying pan , add the onion and garlic and fry for a couple of minutes until soft. Now add the beef and aubergine, a few pieces at a time and fry until browned. Once you’ve fried all the beef and aubergine, add the curry paste, fish sauce and coconut milk. Bring this all to the boil and transfer into the slow cooker. Cover with a lid and cook on low for 8-9 hours .Serve with rice.
