- 3 eggs
- 1 egg yolk
- 1 tsp vanilla extract
- 140g caster sugar
- 140g plain flour
- 1 tsp baking powder
- 140g unsalted butter, melted and cooled
- Extra butter for greasing
- 2 teaspoons icing sugar
Got given some mini madeleine moulds for my birthday so got busy ! They were just the ticket!

Preheat the oven to 190celsius or 375 farenheit or gas mark 5.
Lightly grease 30 holes in 2 or 3 standard sized madeleine tins.
Place the eggs, egg yolk, vanilla extract and caster sugar in a large bowl and whisk with a hand held electric mixer until these ingredients look pale and thick.
Sift the flour and baking powder and fold in lightly using a metal spoon. Fold in the melted butter evenly.
Spoon in the mixture into the prepared tins, filling to about three quarters full. Bake in the preheated oven for 8-10 mins, until risen and golden. Remove the cakes carefully and place on a wire rack to cool. Dust with icing sugar. They are best eaten on the day they are made.
