- Bunch of kale
- 2/3 small courgettes
- 1 tablespoon of sesame oil
- 2 tablespoons of olive oil
- Salt and pepper
A great green veg, elevated in taste by the bacon and courgette.
Wash the kale well and chop – remove the larger stems.
Chop up the courgette into small pieces – diced size. Then put the olive oil into a wok and heat over a medium flame. Put the courgette into the oil and fry for 2-3 mins, then remove using a slotted spoon and set to one side.
Now chop the bacon into small pieces and fry in the remaining oil.
Let the bacon crisp up so it begins to stick a little to the wok – stir continuously for about 2 mins. Now lower the heat add a tablespoon of sesame oil and tip the cooked courgette back into the wok followed by the washed kale. Stir and cook for a further minute and then switch off the heat and leave it in the pan.
Season with salt and pepper.
