- 75g Unsalted Butter
- 3 Large Eggs
- 75g Caster Sugar
- 125ml Lemon (or Lime) Juice
- Zest of 1 Lemon (or Lime)
A quick, simple recipe. Once you have made this at home you’ll wonder why you ever bought it in the first place.
Melt the butter in a bowl over a saucepan of boiling water. Don’t let it boil too hard.
Add the rest of the ingredients, whisking all the while.
As soon as you get a double cream consistency take it off the heat and pour into a clean jar or plastic pot. Leave to cool. Keep it in the fridge.
