- 2 gammon steaks
- Salt and pepper
- Breadcrumbs (approx. 2 slices of bread)
- The sauce: mature cheddar cheese 125g
- The sauce: plain flour 40g
- The sauce: butter 25g
- The sauce: milk 1 pint
Great on a cold night.
Part cook the gammon steaks by frying the in a little oil on a high heat for a minute on each side. Remove to one side and let cool.
Take the outer leaves off the cauliflower, divide into florets and place in a large saucepan of boiling water. Cook for approx. 5 mins and then drain, and set to one side. Place in a large oven proof dish with high sides.
Now for the cheese sauce: Make this by melting 25g of butter in a pan. Add 40g of plain flour and mix, the mixture will thicken and smell of biscuit. Now begin to add the milk a little at a time mixing continuously with a balloon whisk. Once all the milk has been added, tip half the grated cheese in and whisk again. This will help thicken the sauce. When you are happy with the consistency, add salt and pepper and take off the heat.
Chop the gammon into small bite size squares and combine with the cauliflower. Now pour the cheese sauce over the top using a spatula to not allow for any waste!
Sprinkle with the remaining cheese and breadcrumbs. Pop in oven for 30 -40 mins gas mark 6 200 degrees C (until it is nice and crispy brown on top).
