• 2 tbsp olive oil
  • ½ tsp Ground cumin
  • ½ tsp cinnamon
  • ½ tsp coriander
  • Black pepper
  • Salt
  • 1 pinch dry mixed herbs
  • 2 chicken breasts
  • 1 thin steak
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 large onion
  • I pack of 8 tortillas
  • 1 pot of shop bought sour cream

This was a quick yet tasty dinner on a busy week night. Could add chilli.

Prep all the peppers by slicing them into long pieces. Chop the meat into thin long pieces also.
In a large frying pan on a high heat put the oil in, then add the sliced onion and cook for 3 to 4 mins stirring.
Now add the meat and stir again for approx. 2 mins – it will cook quickly. Now add the peppers and all the seasoning stirring again for another 5 mins, or until the peppers are al dente (cook for longer if you wish).
Follow the packet instructions for the tortillas (ours went in microwave for 45 seconds)
Place the stir fried meat and veg into a warm bowl on the table and let everyone help themselves.
Serve with a pot of sour cream, salsa and rice. Job done!
