Make the dressing first:
The quantity can be altered to taste or to suit the number of people you are cooking for.

Simply mix the ginger and crushed chillies with the juice of 2 limes, a sprinkle of brown sugar, a dash of soy sauce and about a tablespoon of fish sauce. Combine the mixture well and set aside.

The best thing to do with your scallops is to dry them with a bit of kitchen towel before cooking them.
Heat a fry pan to a high heat. When it is hot put a tiny bit of olive oil in the base of your pan and place in your scallops. They don’t take long, depending on the size of your scallops no more than a minute either side. When they are done they will be nice and golden brown on each side.

Place your scallops on a plate, drizzle with the dressing and serve with a lime wedge.
