- Leftover Potatoes (or mash).
- Leftover carrots, parsnips, sweet potato or any other root veg.
- Leftover cabbage, greens, Brussels or similar.
- Salt and Pepper.
This is version 1.
There are no set amounts to this as I combine whatever is left over. A rough guide is 2 parts potato to I part root veg and 1 part green stuff.
I often serve this with a main course meal such as chops or sausages.
Mash the potato and root veg (I use a potato ricer). Try and make it a well mashed as you can. Add a large knob of butter which you have melted and mix well.
Add a good pinch of salt and pepper.
Finely chop the green stuff and mix this well in.
Shape into patties onto an oiled baking tray. I then pop these in the fridge to firm up for at least ½ hour.
Pre heat the oven to gas mark 5 190 degrees C.
Put them in the oven for 30 to 40 mins until browned and crispy on the outside.
