• 25g Butter
  • 500ml chicken stock
  • 450g broccoli. broken into small florets
  • 150ml single cream
  • 100g stilton cheese

Melt butter in a pan, add onion and cook gently for 5 mins.
Add broccoli and chicken stock, bring to boil. Simmer for 5 mins or until broccoli is tender.
Blend then crumble in stilton and wizz with blender again for a few seconds just to break up cheese.
Stir in cream and heat very gently. Do not boil.
Season and serve!!
