You can make these any shape, depending on the cutters you have at home. My daughter is currently fish mad, hence the name ‘Fish Biscuits’
Top Tip: Make double the quantity and freeze the dough so you can make more biscuits without the hassle of making up the dough!

Preheat the oven to gas mark 4, 180C or 350F. Then lightly grease a baking tray.
Sift the flour into a large bowl. Cut the butter up into little cubes; add it to the flour and using your fingers rub these ingredients together until it looks a bit like breadcrumbs.
Now stir in the sugar, add the vanilla extract. Use your hands to make a firm dough consistency.

Roll out the dough on a lightly floured surface to roughly a thickness of 1cm.
Use your preferred cutter and arrange on the prepared baking tray.
Bake in the preheated oven for approx. 15-20 mins. Transfer to a wire rack and allow to cool. Sprinkle with a little caster sugar and they are ready to eat.
