• 175g plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • Pinch of salt
  • 125g unsalted butter
  • 150g sugar
  • 2 large eggs
  • 4 small very ripe bananas (about 300g)
  • 1 teaspoon vanilla extract
  • 2 tablespoons of dark chocolate chips

This will fill the house with the most amazing smell.
You will need a lined loaf tin.
I adapted this from the lovely Nigella but added the chocolate chips. You could roughly chop up about 50g of plain chocolate (I use whatever is to hand).
This is my mixer version.

Pre-heat oven to gas mark 3 or 170 degrees C.
Put the butter in a small pan on the lowest heat and just before it has all melted, take it off the heat and put to one side (it will completely melt with the residual heat).
Put the rest of the ingredients except the chocolate in a mixer or food processor and on a low speed. Combine briefly and pour in the melted butter. Increase the speed briefly until you have a smooth batter. Stir in the chocolate chips by hand and using a spatula put the mix in the lined loaf tin.
Bake in the middle of the oven for 1 hour. Check it by inserting a wooden skewer which should come out cleanish. It may need another 10 – 15 mins but keep an eye so it does not burn on the top.
Leave in the tin to cool before turning out.
