Banana and raspberry loaf, 7.0 out of 10 based on 1 rating To prepare you will need to preheat your oven to 180°C and grease a loaf tin and line with baking paper.
Using an electric mixer, cream butter and sugar until pale and fluffy. Add the eggs and beat well. Mix in the mashed banana. Sift the flour and baking powder over the mixture and then add the milk. Mix all these ingredients together making sure everything is combined well and mixture is smooth. Very carefully fold in the raspberries.
Pour the mixture into the loaf tin and place in the oven.
Bake for about 45 minutes. Check that it is cooked all the way through by dipping a skewer in and making sure it comes out clean.
Once cooked leave to cool in the tin for about 10 minutes before turning it out onto a rack to cool further.

Serve with butter.
