- A dozen or so fresh sardines
- Fresh or dried herbs of your choice
- Salt and pepper to season
These little fish are so tasty and easy to cook.
Simply get you cleaned fish and lightly coat with olive oil. Sprinkle with a mixture of herbs and spices as you wish. I like dried oregano, chilli flakes and a tiny bit of cayenne pepper. Rub the herbs and spices into the skin.
Heat your BBQ or grill to high and grill the sardines for a few minutes on each side.
Eat straight away, thats when they are best.
Serve with fresh lemons wedges.
